Veggie Cupcakes

Parents with picky eating children, what are your tricks for getting them to eat their veggies? Let's chat about this a bit!

My sweet doll baby of a little angel girl has always been a monster when it comes to mealtimes. From the time she was six months old having her first tastes of green bean and avocado purees, she's been avid in her hatred of most vegetables. Oh sooooo frustrating!

Out of pure necessity I've become a master at making healthy food fun and exciting. It's very helpful to hear other parents ideas as well, so leave me a comment below explaining how you make fresh food fun for your kids.

My Best Tips for Making Peace with Picky Eaters:
  1. Make it a game! The fun activity that works best with my daughter is something we call "Guess the Food." You have to suggest this game when the child is in a reasonably good mood. Consider making it a competition between all of the members of the family and the winner gets a small treat. My daughter covers her eyes and I put a bite of something in her mouth for her to taste and tell me what she thinks it is. I always start with a food I know she will like. I alternate between foods she will like and those she might be more resistant to trying. If she really hates something, I tell her she doesn't need to eat anymore of it. Most of the time she is surprised by the foods she actually likes. This has helpful for creating an excitement around trying new foods.
  2. Involve children in growing, purchasing, and preparation of vegetables. Encourage them to experience the vibrant colors, smells, feel and even sounds of fresh vegetables. Use every sense besides taste at first to enjoy them. Finally, have your kids guess what it might taste like and discuss that before they try it.
  3. Make vegetables look fun! With this in mind, I came up with Veggie Cupcakes:

I thought to myself "hmmm... what food does my daughter always say yes to?"

The answer is CUPCAKES!

For this fun little snack I took the idea of a cupcake and spun it to be a fresh and creative treat that will absolutely appeal to kids... of all ages!

To make your own veggie cupcakes you will need these items:
  • Assorted fresh veggies, washed and cut into bite size pieces
  • Kraft Dips, any flavor
  • Cupcake liners (fun colors and patterns are best)
  • "Sprinkles" such as paprika, poppy seeds, sunflower seeds, sesame seeds, ground pepper, etc.

Set out your cupcake liners and fill them with a serving of fresh vegetables. Top each cupcake with Kraft Dips. I did this by filling a zip top bag with the dip, cutting off the corner of the bag, and then piping the dip over the vegetables. Finally, top the cupcakes with "sprinkles" of your choice.


Kraft Dips come in three flavors: French Onion, Bacon and Cheddar, and Green Onion. Find the Kraft Dips in their new packaging in the refrigerated section at Walmart:

My daughter thought the "cupcakes" were so pretty!


These will be wonderful for an afternoon snack, school lunches, dinner side dish, parties, picnics, potlucks, and more.
